- En una olla exprés ponemos un chorro de aceite a calentar. Marcamos el pollo y reservamos.


- En ese mismo aceite pochamos las verduras, a fuego medio, en este orden: cebolla (con pizca de sal para que llore, como me hizo llorar a mí), el tomate troceado y las zanahorias. Cuando el tomate troceado esté casi deshecho echamos la mostaza y damos un par de vueltas.


- Volvemos a incorporar el rollito de pollo con las verduras. Lo volteamos un par de veces para que se manche del sabor de la mezcla de las verduras y la mostaza y añadimos el Pedro Ximénez. Subimos el fuego y dejamos que evapore.



- A continuación, una vez ya no quede alcohol, bajamos el fuego a medio y añadimos el caldo de verduras (o pollo) sin que llegue a cubrir. Más o menos a mitad del rollito. Como yo no tenía caldo, eché media pastilla de caldo de verduras y agua. Esperamos a que empiece a cocer y tapamos. Cocinamos en la olla exprés 20 minutos.
