  1. Cogemos la pechuga y la picamos lo más pequeña posible, o bien podemos comprarlo ya picado (al gusto)
  2. Yo personalmente la pico a cuchillo en casa.
  3. Hacemos lo mismo con el jamón y el tocino fresco
  4. Añadimos sal y pimienta molida y en un mortero machacamos los clavos y también lo ponemos.
  5. Batimos los huevos y se lo ponemos y amasamos todo para que se reparta todo bien. Y ponemos el colorante alimenticio.
  6. Ahora añadimos unas 4 cucharadas de vinagre y en un plato aparte ponemos un poco de vinagre para mojarnos las manos y facilitar hacer unas bolas grandes o medianas (al gusto)
  7. Una vez las tengamos hechas ponemos una olla de agua con huesos de jamón, un trozo de añejo y un chorreón de vinagre.
  8. Metemos el relleno y lo ponemos a fuego fuerte y sin dejar que el agua quede cubriendo el relleno.
  9. Lo tendremos en olla exprés media hora si no utilizamos la olla exprés lo dejamos hasta ver que la carne está bien hecha y el caldo tiene cuerpo.
  10. Después sacamos el relleno de la olla y lo ponemos en un plato o fuente para que enfríen y al caldo Le quitamos los huesos de jamón y el añejo
  11. Al caldo se Le añade fideos y si quieren un trozo de relleno si no el relleno se come como si fuese charcutería es decir tipo pollo relleno.
